Reading: scones
Intermediate to higher level (B1-C2)
Scones are a fun tea-time British treat.
You can make them in about 30 minutes
and eat with jam and cream.
My recipe (personally tested!) will make about 6 scones.
What you will need:
250g self-raising flour plus 1 teaspoon of baking powder (or plain flour plus 2 teaspoons of baking powder)
2 teaspoon(s) caster (very fine) sugar
10g butter (chopped)
Approximately 125ml milk
A pinch (a little bit) of salt
Optional 50g sultanas
What you do:
1. Turn on the oven (220C, Gas mark 7)
2. Sift the flour into a bowl and add the salt, sugar. Mix well
3. Add the chopped butter and rub (with your fingers) into the dry ingredients until it looks like breadcrumbs
4. Stir in the sultanas (if you are using them)
5. Add 90% of the milk to the centre of the mixture and mix with a blunt (not sharp) knife
6. Mix until you get a soft sticky dough. Only add the rest of the milk if the dough is too dry
7. Knead lightly until the dough is smooth
8. Gently roll the dough until it is 2cm thick (only flour the board very lightly)
9. Use a 5cm cutter dipped in flour to cut out rounds of dough
10. Place on a lightly greased (use a little butter) tray and if you want brush the scones with a little milk. Bake for 12-15 minutes
11. When cooked, put on a wire rack to cool for 10 minutes
Make some tea, cut scones in half and serve with butter or whipped cream and jam. Best enjoyed with friends!
By the way, I pronounce ‘scones’ like ‘stones’ but of course they taste better!
